MARINADE
3 tablespoons soy sauce
1 tablespoon sherry
1 teaspoon freshly grated ginger

1 pound thinly sliced beef
2 tablespoon vegetable oil (preferably peanut or sesame)
1/3 cup beef broth
1 pounds broccoli, cut up
1 tablespoon red pepper flakes (optional)
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons water

Directions:

Mix marinade ingredients. Add beef and let marinate 10 minutes. Heat wok or large skillet on high heat Add oil and stir-fry beef until no longer pink. Remove beef and set aside. To skillet add the beef stock and once it comes to a boil add the broccoli. Cook uncovered 1 minute, then cover, reduce head to medium and cook 4 minutes. Add beef, pepper flakes (if desired) and soy sauce; bring to a boil. Mix the cornstarch and water and bring to a simmer (you may not need to use all of it). Serve with rice.
