8-10 flour tortillas
2 (15 oz) cans tomato herb sauce

FILLING
2 lb of ricotta cheese
8 oz shredded mozzarella cheese
½ cup grated Parmesan cheese
2 eggs
1 tsp salt
½ tsp pepper
1 Tbsp chopped parsley

TOPPING
½ cup grated Parmesan cheese

Directions:
Directions:
Combine filling ingredients and beat with electric mixer until well blended.
Divide filling among 8-10 tortillas, placing filling near one edge. Roll tortillas and arrange, fold side down, in a greased 9 x 13” baking dish. You may need more than one pan.
Pour tomato sauce over cannelloni and sprinkle with Parmesan.
Bake 35-40 minutes or until thoroughly heated.
