8 cups chopped rhubarb
3½ cups light brown sugar
1½ cups chopped raisins
½ cup chopped onion
½ cup white vinegar
1 tsp. allspice
1 tsp. cinnamon
1 tsp.ginger
1 tsp. salt

Directions:
Directions:
Prepare canner, jars, and lids. In a stainless steel saucepan, combine all of above ingredients. Bring to boil on high heat, stirring frequently. Reduce heat and boil gently, stirring frequently, until mixture is thickened to the consistency of barbecue sauce about 30 minutes. Put sauce in hot jars and process for 35 minutes. Be sure to cover with water and leave in canner for five minutes. Remove, cool. and store.
