Ingredients: 1 sour (lime juice) 2 sweet (simple syrup) 3 strong (dark rum) 4 weak (finely crushed ice) A dash of bitters (Angostura bitters) and a sprinkle of spice (freshly grated nutmeg), serve well chilled with plenty of ice.

Directions:The amount of the first 4 ingredients does not mater as long as the ratio in maintained. Make simple syrup by heating 2 parts Bajan cane sugar and 1 part water until the sugar crystals dissolve .Cool. Squeeze fresh limes to make lime juice and reserve the peel. In a pitcher combine one part lime juice, 2 parts simple syrup, and 3 parts Rum. Dark Barbadian rum is best. Mix well. Fill a short cocktail glass with crushed ice and pour the rum mixture over the ice. Add a dash of Angostura bitters to each glass, a quarter lime rind, and a grating of fresh nutmeg. Stir and crush the lime peel a little. This is a sipping drink that should be enjoyed slowly to let the ice melt. The Bajan's will also chew the ice as they drink it. |

Notes: For authentic taste you need unrefined or partially refined sugar. Some recipes call for a lighter simple syrup of 1 part water and 1 part sugar. Lime juice must be freshly squeezed Some people use cold water for the "4 parts weak" and then add ice cubes to get it cold. but Tony always uses crushed ice and makes it too taste. You can put a few pieces of lime rind directly into the rum mix and just scoop one into each glass. The peel adds just a hint of bitter taste. The left over rum mix will keep in the refrigerator for a few days (like that ever happens).
