2 pounds of tasajo
1 big slice onion
1 big slice bell pepper
1 can of tomato sauce
3 garlic cloves
3 tbs spoons olive oil

Directions:
Directions:
Leave tasajo in water overnight .Next day empty the water and rinse the tasajo with water 2 times . When you are done with a knife remove the yellow grease that covers the tasajo. Put it on the pressure cooker with water enough to cover the meat for about 45 minutes.When you can open the pressure cooker, check if the meat is tender and shred the meat.In a pan add the olive oil, pepper, onion, garlic, tomato sauce and 1 or 2 cups of the water that you used to cook the meat, and let it cook until water evaporates. You can accompany this dish with white rice and steam or fry sweet potato.
