Scotch Shortbread Recipe

1 cup soft butter
¼ tsp salt
½ cup sugar
1 egg yolk
2¼ to 2½ cups flour

Directions:
Directions:
Cream the butter and gradually work in sugar, salt and egg yolk. Add the flour a little at a time until the mixture is too stiff to work with a spoon.

Turn on to a floured surface and knead lightly, working in the flour until the dough begins to split. Roll out.

Cut into desired shapes and prick with a fork.

Bake at 325º for 20 to 25 minutes...watch carefully !
