Island Dream Cream Pie Recipe

2 C. shredded coconut
4 T. butter or margarine
1 ½ bars Newman’s Own Organics Sweet Dark Chocolate

Spread coconut in shallow pan and bake in 350 degree oven for 10-15 minutes. Stir frequently and bake until lightly browned. Melt chocolate and butter and stir in coconut. Pat evenly into pie pan and chill for approximately 30 minutes before filling.


Filling:

1 ½ large bananas
1 cup sugar
¼ cup plus 1 T. cornstarch
¼ t. salt
3 cups milk
4 egg yolks
3 t. butter or margarine
1 ½ t. vanilla
2 T. rum
1 ½ bars Newman’s Own Organics Sweet Dark Chocolate, chopped

Directions:
Directions:
In medium saucepan combine sugar, cornstarch and salt; gradually stir in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes. Remove from heat. In separate bowl, beat egg yolks slightly. Gradually stir one cup of hot mixture into yolks. Return egg mixture to saucepan; bring to gentle boil. Cook and stir two minutes more. Remove from heat. Stir in butter or margarine and vanilla. Pour half of mixture into separate bowl. Stir 2 T. of rum into mixture in pan. Add 1 ½ bars of chocolate (chopped) to mixture in bowl. Mix well. Slice banana and place in bottom of pie crust. Pour rum flavored cream evenly over bananas. Smooth. Pour chocolate cream over rum cream. Smooth. Chill. Serve with sweetened whipped cream.

I entered the Ninth Annual Newman's Own & Good Housekeeping Recipe Contest in 1999 with this recipe. I didn't win anything, but I was "one of the top 180 out of thousands" of recipes.
