2 lbs great northern beans or navy beans
2 medium onions
1/2 cup dark brown sugar
1/4 cup molasses
1/2 tsp dry mustard
1/4 cup ketchup
1/2 tsp salt
1/2 tsp ginger
1 lb. salt pork
1/2 tsp pepper

Day before serving:

Rinse beans in colander. Place in large pot. Cover with cold water. Let sit overnight.

Preheat oven to 325º

In morning, parboil beans until a few beans in spoon will loosen when blown on. Usually par boil anywhere from 10 to 25 minutes, depending on age of beans. Dice salt pork into large pieces. Drain beans when done, put in roaster pan. Add diced salt pork and sliced onions. Make a mixture of a couple quarts of hot water, brown sugar, molasses, ketchup, salt, ginger, and dry mustard. Adjust flavorings to taste. Pour over and cover beans. After beans begin to bubble, turn down to 300º and bake covered with foil about 8-10 hours. After a couple of hours, check liquid, if it looks dry and not almost covered still, add more water. About 2 hours from final cooking time, remove cover so liquid evaporates a bit. You want them good and juicy but not covered with fluid as they are close to being done.

I have tweaked this recipe... I have taken elements from my mom's recipe and my Aunt Rosalie's recipe. Great memories of family parties with either of their homemade baked beans! I can remember my mom cooking them in an old-fashioned bean pot!
