1 c shortening
1 c molasses
1 1/2 c sugar
1/2 c hot instant coffee
6 c flour
1 tsp ginger
2 tsp baking soda
1/2 tsp nutmeg
1 tsp salt
1/4 tsp cloves
Icing:
1 kg Knox unflavored gelatin
1 tsp vanilla
1 c sugar
1 3/4 c confectionary sugar
1 c cold water
3/4 tsp baking powder

Directions:

Mix all cookie ingredients and chill overnight. Roll and cut with top of empty Spam can and bake 375 for 5-6 minutes on greased cookie sheet. Do not cut too thin, thick cookie is best
Icing: Soak gelatin in the cold water. Add sugar and stir in heavy pan. Bring to rolling boil and then simmer for 12 minutes. Measure confectionary sugar in bowl and pour syrup into it. Add baking powder and vanilla and beat until thick. frosting May have to sit 1/2 to 1 hour before spreading. Frost BOTTOM of cookie.
