Sushi quality salmon
Costco or other pre-made pesto sauce
Spray Oil

Pre-heat oven to 350. Line baking pan with foil and coat with oil. Place salmon filet skin down. Smother with pesto sauce. Bake 20-25 minutes or until center is flaky and lighter color than raw salmon. Good with a salad.

Steve (my brother-in-law) added that there are other sauces that may be used similiarly but this is so good that he hasn't branched out yet. Peggy, my sister, uses dill and mayo. The pesto can also be used with chicken and other types of fish, the fresher the better. He also likes mixing it with eggs and other ingredients before scrambling. Interesting that Steve also mentioned that cooking multiple items, and timing them to finish simultaneously, is difficult.
