2 cups finely diced tomatoes (3-4)
1½ cups sugar
1 cup canola oil **
1 cup chopped walnuts
2 eggs
1 tbsp. vanilla
1 tsp. salt
3 cups flour
1 tbsp. cinnamon
1 tsp. baking soda
¼ tsp. baking powder

Directions:
Directions:
Preheat oven to 350ºF. Grease and flour 2 loaf pans. In a large bowl mix together tomatoes, sugar, walnuts, oil, eggs, vanilla and salt and set aside. In a medium bowl, mix remaining ingredients; stir into egg mixture until just blended. Pour into prepared loaf pans.

Bake for 1 hour or until toothpick inserted in loaf comes out clean. Let cool for 10 minutes then transfer to wire rack to cool completely.

** Use can substitute with ½ cup oil + ½ cup applesauce
