1 onion
1 green pepper
Jalapeno to taste
2 cloves garlic, chopped
2 tsp cumin seeds (or ground cumin)
1 tsp turmeric
1/2 tsp chili flakes
Large tin tomatoes (or fresh)
Can of kidney beans
Can of black beans
Can of butter beans
Can of sweet corn
Ginger
Coriander
S&P

Directions:
Directions:
Sauté onions and peppers in oil. Add jalapeño and cumin stems, cook a bit then add cumin or seeds, turmeric and chili flakes. Stir around and add tomatoes and vegetables. Cook out. Add freshly grated ginger and coriander near the end.
Serve with sour cream, guacamole and flour tortillas.
