1 peeled eggplant, cut in 1/4 inch slices
1 c. chopped onions
1/2 t. Italian seasoning
2 garlic cloves, chopped
1 (8-oz.) package sliced mushrooms
1 (8-oz.) can tomato sauce
2/3 c. shredded mozzarella
1/4 c. grated parmesan

Spray baking sheet with Pam. Arrange slices and broil both sides of eggplant. In a large skillet, cook onions, garlic, mushrooms, & Italian seasoning. Cover & cook until tender. Remove cover & cook until liquid evaporates. Spread 1/2 mushrooms in flat dish coated with Pam. Top with 1/2 the eggplant. Sprinkle with salt & pepper. Top with 1/2 can tomato sauce & 1/3 c. mozzarella. Repeat. Cover & bake 1 hour at 325º. Sprinkle with 1/3 c. mozzarella & parmesan. Bake 5 minutes. Let sit 10 minutes before serving.
