1 lb. zucchini (about 2 med.)
1/4 c. Parmesan cheese (heaping)
1/4 c. Panko bread crumbs (heaping)
1 T. olive oil
1/4 t. each salt & pepper

Directions:
Directions:
Preheat oven to 400º. Cut squash into 1/4 inch rounds. Combine cheese, bread crumbs, salt & pepper in separate bowl. Shake squash in olive oil, then in bread mixture, coating both sides. Line baking sheet with foil and spray with cooking spray. Put squash in single layer on baking sheet. Put remaining bread crumbs on top & bake 20-25 minutes. Do not turn!
