Your favorite boxed white cake mix and all the ingredients.
2 egg whites
1 c granulated sugar
½ tsp cream of tartar
1/8 tsp salt
3 T water
1 tsp vanilla

Bake your favorite white cake and cool it. This can be a layered cake or a sheet cake. The Greenawalts used to have a bunny-shaped pan!

This is a recipe for the incredible, coconutty frosting.

Mix all the ingredients together in the top of a double boiler.

In the bottom one, put 1 ½ inches of water and bring to boiling. Put the other pan on top and heat it up.

(Lisa and Gavin don’t have a double boiler and found that a pot on top of a pot did the trick nicely.)

Beat the mixture on high with an electric mixer for four minutes or until peaks form. (That was the fun part, to Gavin. It even made touching the raw eggshells worth it!)

When that’s ready, spread the icing immediately on the cooled cake. Katy suggests sprinkling a little coconut on the cake first and then putting the icing on top; it sticks a little better that way. Then sprinkle a generous amount of coconut on the top. Don’t be chintzy; the more coconut the better the cake.

In the end, it should look like a fluffy bunny.
