Chicken Pom Poms Recipe

1 celery stalks
1 small onion
1/4 c.butter
1/2 c. flour
3/4 tsp. poultry seasoning
1/4 tsp. each salt, pepper
1 c. chicken broth
2 T chicken bouillon
3 c. shredded chicken
2 c. shredded cheddar cheese
4 c. cooked rice
Approx. 2 c. bread crumbs for coating chicken balls
1 1/2 tsp. paprika
2 cans cream of chicken or mushroom, or one of each, soup

Directions:
In dutch oven, saute celery and onion in butter. Stir in flour and seasonings. Gradually add chicken broth. Add bouillon. Bring to low boil and cook and stir about 2 minutes until it thickens. Cool then cover and refrigerate for 3 hours. When chilled, add chicken, cheese and rice. Mix well. Roll 1/4 c. mixture into balls. Roll balls in bread crumb/paprika mixture. Place on greased baking sheet. Bake at 400º for 25 - 30 minutes. In saucepan, heat up soup and serve over pom poms.
