1½ kg potatoes
4 eggs
50 g buter
50 g flour
2 bay leaves
1 clove garlic minced
350 ml milk
350 ml stock
200 g olive oil
200 g spinach
50 g cheddar
½ lemon
1 tsp dijon mustard
fresh parsley
300g cod / haddock
200 g salmon
200 g smoked haddock
1 whole nutmeg
salt and pepper to taste

1. preheat 400º F and will bake for 45 min
2. peel and boil potatoes, Boil eggs. Wilt spinach with garlic.
3. make roux with butter and flour and add bay
4. Add milk and stock and cook 10 minutes
5. Add mustard, ½ cheese and lemon juice, parsley and salt and pepper mix until smooth
6. In a 25x30 dish add cubed fish (1 inch pieces) and quartered egg
7. Top with wilted spinach and sauce.
8. Mash potatoes with nutmeg and olive oil
9. Cover with cheddar and bake for 45 min
