2 c. sugar
1 c. shortening
3 eggs
1 c. evaporated milk
1 T. vanilla
2 tsp. baking powder slightly rounded
½ tsp. baking soda slightly rounded
1 tsp. salt
5-5½ c. flour- enough to make a soft dough easy to roll
Filling:
1 T. cornstarch
3 T. all-purpose flour
1 c. packed brown sugar
2 c. boiling water
1½ c. seedless raisins

Directions:
Filling: In a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool.
Dough:Cream sugar and shortening together. Sift 3 c. flour with baking powder, soda, and salt. Mix eggs, milk, and sifted flour mixture. Add more sifted flour until you make a soft dough that can be rolled. Roll dough on a floured* surface into 1/8-in. thickness and cut with floured 3-in.-round cookie cutters. Place cookies on a greased and floured cookie sheet. Spoon 2-3 tsp. of filling on top of the circles. and top each with another circle. Pinch edges together and cut slit in top. Bake at 400º about 10 minutes.
* Use Wondra flour to flour the board when rolling the dough.
