12 oz. uncooked mini rigatoni or penne
1 lb. broccoli rabe, ends trimmed, stacked, and cut into 1-in-wide strips
1 lb. hot italian sausage (casings removed)
shredded italian cheese to taste

Directions:
Directions:
1. Bring large pot of water to boil. When boiling, add 2 T salt and then cook pasta to al dente.
2. 2 imutes before pasta is done, add broccoli rabe.
3. Drain pasta and broccoli rabe, reserving 1 cup water; return the rest to pot (not the water).
4. While pasta cooks, heat a skillet over medium hight heat; add sausage and cook, breaking up large chunks. 5-7 minutes until browned and cooked through. Add reserved water.
5. Cook, stirring, 1 minute to loosen brown bits on bottom of pan. Pour over pasta mixture in pot; cook, stirring, 1 minute to heat and mix.
6. top with cheese (optional) and serve immediately.

This keeps well in the fridge if you cook the pasta al dente - otherwise the re-heating makes it mushy. This is one of the best fast and fairly healthy dishes with a lot of flavor!
