1 TB butter
1 large onion, thinly sliced
1/2 cup coarsely chopped green pepper
1 garlic clove, minced
2 TB flour
1 pound pork sausage, smoked sausage or ham cut into 1/2" cubes
3 cups cooked shrimp, shelled & deveined(about a pound)
5 cups diced peeled tomatoes
2 TB chopped parsley
2 cups RAW long grain white rice
2 TB Worcestershire sauce
1+1/4 tsp salt
1/2 tsp dried thyme
1/8-1/4 tsp cayenne

Directions:
In large deep skillet, heat butter. Add onion, green pepper & garlic. Saute 5 minutes or until tender

Remove from heat. Stir in flour. Gradually add 2+1/2 cups water , stirring until smooth

Return to heat. Add remaining ingredients; bring to boiling, stirring

Reduce heat to simmer. Cook, covered but stirring often - about 30 minutes or until rice is tender

Serve sprinkled with more parsley
