5 eggs
1 1/4 cup vegetable oil
1 (15 oz) can of solid pack pumpkin
2 cups flour
2 cups sugar
2 (3oz) packages of vanilla instant pudding
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Directions:
Directions:
In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients. Gradually beat into pumpkin mixture. Pour batter into 5 greased SMALL loaf pans (or 3 regular loaf pans).

Bake at 325 for 50-55 minutes. Cool on wire racks.

Add chocolate chips or walnuts!

In the grocery stores where they have the disposable aluminum foil pans, they sell the small loaf pans in sets of 5.
