Heavy Cast Iron Frying Pan

2 - favorite Steaks, 1½ thick
2 T. Butter
Kosher Salt and Freshly Grond Pepper

Preheat oven 475º

Pat dry with paper towels and Salt and Pepper Steaks on both sides, let rest at room temperature one hour, prior to cooking.

Add the butter to a cast iron skillet on high heat.

Sear the steaks on high heat 45 seconds to 1 min on each side

Top each steak with dab of butter (can use your favorite flavored butter, like a garlic or rosemary)

Put pan with the steaks in oven for 4-5 minutes for perfect medium rare

Rest for five minutes
