1 1/2 c milk, at room temperature
3 extra-large eggs, at room temperature
1 1/2 c flour
3/4 tsp kosher salt
1 1/2 Tbsp unsalted butter, melted, plus softened butter to grease pans

Directions:
Directions:
Preheat oven to 425º Generously grease aluminum popover pans or pyrex custard cups* with softened butter. (You'll need enough pans to make 12 popovers). Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the milk, eggs, flour, salt and butter and whisk until just smooth. The batter will be thin. Fill the popover pans 1/2 to 2/3 full and bake for exactly 30 minutes. Do not peek.
*Ellen uses large muffin tins and small pyrex dishes (as pictured)
