1+1/4 cup butter, softened
2 cups packed brown sugar
2 eggs
2 tsp vanilla
2+1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 cup old fashioned oats
1 - 12 oz. pkg vanilla chips
1+1/3 cups chopped pistachios, divided

Directions:

Preheat oven to 350º

In a mixing bowl cream butter & sugar.

Add eggs & vanilla; mix well.

Combine flour, baking powder, baking soda & oats.

Gradually add to creamed mixture & mix well.

Stir in chips& 1 cup nuts.

Shape into 1" balls, place 2" apart on ungreased cookie sheet.

Lightly press remaining nuts into cookies.

Bake for 10-12 minutes or until lightly browned

Cool 2 minutes before removing to racks
