Pineapple Pie Recipe

Ingredients:  
1 cup sugar
1/2 cup flour
3 egg yolks
2 T butter
1 #2 can crushed pineapple (20 oz)

1 baked pie shell
Meringue:
3 egg whites
4 tsp cream of tartar
1/3 cup sugar

Directions:
Directions:
Mix flour, sugar, pineapple, beaten egg yolks and butter.
Cook in double boiler until thick.
Put filling in pie shell.
Meringue: Beat whites with cream of tartar til frothy.
Beat in sugar a little at a time.
Beat til stiff and glossy.
Put on top of filling and seal edges with meringue.

Bake at 400º 8-10 minutes.

***When making meringue, use glass bowl and have eggs at room temperature

This is an excellent pie! I won a pie contest for it at church once.
