2 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
3 Tbsp. olive oil or vegetable shortening
1 Tbsp. buttermilk powder or nonfat dry milk
¾ cup hot water

Directions:
Directions:
In a large bowl, combine the flour, baking powder, and salt. Mix in olive oil (or shortening) until the mixture resembles a coarse meal. Make a well in the center of the mixture. Combine the hot water and buttermilk powder (or nonfat dry milk) and add to flour mixture. Stir until blended. Cover and let rest for 20 minutes.

Turn onto a floured surface. Knead 10 to 12 times, adding a little flour or water if needed to achieve a smooth dough.
Divide the dough into 8 portions. On a lightly floured surface, roll each portion into a 7-inch circle.
In a greased cast-iron or another heavy skillet, cook the tortillas over medium-high heat, 1 minute on each side, until lightly browned. Serve warm.
