"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 rack of ribs per 2 adults - we like to make an extra for leftovers or to be frozen
Water
Salt and pepper
Barbecue Sauce (homemade or bottled)

Directions:
Directions:
Preheat grill to 350º. Rinse and pat dry ribs and leave out to come to room temperature. Liberally apply salt and pepper - can also use your preferred dry rub.
Place in a large foil disposable baking pan and pour about 1/2 cup of water in bottom of pan - just enough to cover the bottom of the pan.
Tent foil to completely cover.
Put on grill for 2-2 1/2 hours until it temps out at 165º.
Remove from grill and baste with barbecue sauce - we like Stubbs sticky sweet. Turn up the grill - we like to throw it back on the grill to crisp it up and caramelize for just a few minutes.
Serve with all the best summer barbecue side dishes!!!
