Ingredients: 1 box of macaroni and cheese, whichever is your favorite (Kraft, Velveeta Shells, etc) 1 package/ can of albacore tuna (drained) 1 can of Campbells Cream of Mushroom condensed soup (10.5 oz) 3-4 slices of American Cheese 1/2 a sleeve (or so) Ritz Crackers Salt Pepper

Directions:Cook mac and cheese per directions on box
In a mixing bowl combine mac and cheese with cream of mushroom soup (straight from the can, no added water or milk).
Put mixture in a baking dish then top with salt and pepper (however much you like).
Tear the American cheese into halves and arrange on top of mac and cheese mixture in a single layer.
Crush Ritz crackers and sprinkle the cracker bits on top of mixture. You want a good layer that covers most of the top.
Put dish in 350 degree oven for 15-20 minutes.
To serve: Use a spatula to dish out 4 servings, attempting to keep the cracker layer mostly on top. |

Notes: This is my ultimate comfort food - my mom used to make this for me when I was a kid. When I got to college I asked my mom for the recipe because I would crave it when I felt homesick.
Mom laughed and said it's a perfect poor college kid recipe, that's when she used to make it because it could feed her and her roommates for less than five dollars.
It's cheap, very easy, and will always be a favorite of mine.
