½ cup (1 stick) butter, softened
½ cup sugar
½ cup packed light brown sugar
2 to 3 Tbsp. powdered instant coffee
2 tsp. vanilla
1¾ cups flour
1 Tbsp. baking powder
½ tsp. salt
2 eggs
⅔ cup milk
1½ cups walnuts, coarsely chopped
¾ cup semi-sweet chocolate chips

Heat oven to 350ºF. Prepare muffin tins by greasing or lining with paper muffin cups.

Beat butter, sugar, brown sugar, instant coffee, and vanilla in a large bowl until creamy. In a separate bowl, stir together flour, baking powder, and salt. In another separate bowl, beat together eggs and milk. Alternating, add flour mixture and egg mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups ½ full with batter. Bake 20 to 25 minutes.
