1 lb. boneless, skinless chicken thighs
salt, to taste (for seasoning chicken)
1 large yellow onion, cut into large pieces
fresh parsley, for garnish

For Garlic Dijon Sauce:
⅓ cup olive oil
3 tsp. Dijon mustard
2 tsp. honey
6 garlic cloves, minced
1 tsp. ground coriander
¾ tsp. paprika
½ tsp. black pepper
½ tsp. cayenne pepper (optional)
pinch of salt

Preheat oven to 425ºF. Pat dry chicken thighs and season on both sides with salt. Set aside. Combine ingredients for honey garlic Dijon sauce in a large bowl. Add chicken to honey garlic Dijon sauce and coat each piece thoroughly. Transfer coated chicken pieces to a large lightly-oiled cast iron skillet (or baking sheet). Pour any remaining Dijon sauce left in bowl over chicken and then add onions to skillet. Bake in oven for 25 to 30 minutes or until chicken thighs are fully cooked. Remove from heat and garnish with fresh parsley.
