16 oz spicy Italian Sausage
8 slices of bacon
1/2 large onion, diced
2-3 minced cloves of garlic
28 oz low sodium chicken broth
3 cups of water
5 medium russet potatoes, thinly sliced
1 tsp crushed red pepper flakes (optional)
salt & pepper to taste
4 cups chopped kale
1 cup heavy whipping cream
Parmesan cheese

Directions:
Directions:
Brown sausage in large pot

Remove sausage with slotted spoon & set aside

Cut bacon into small pieces & add to pot & cook until crispy

Stir in onion. Cook until translucent

Stir in garlic & continue to while stirring frequently, for another minute

Add broth & water to pot. Add seasonings to taste

Add thinly sliced (by a mandoline) potatoes & cooked sausage to the pot & bring to a simmer over medium heat

Continue cooking until potatoes are tender - about 10 minutes

Add kale to soup & simmer 10 minutes more, stirring often

Stir in cream & let heat through - do not boil.

Serve in bowls with parmesan cheese on top
