Large onion, chopped – divided [Suggestion: use sweet onion]
2 apples, cored, peeled and chopped
¼ lb. (1 stick) butter
2 - 4 chicken breasts, cut in half
1 can cream of mushroom soup
1 cup cream
1 Tbsp. curry powder
1 tsp. smoked paprika
salt, to taste
2 – 3 cups white rice
½ cup raisins

Directions:

Set aside about ¼ cup of onion for the raisin rice (directions below).
Sauté the remaining onion and the apples in 2 to 3 Tbsp. butter.
Once the onions are translucent, stir in the mushroom soup and the curry powder.
Then add the cream and stir and heat at a simmer.
Meanwhile, sprinkle the chicken pieces with salt and smoked paprika.
Place the chicken pieces in one layer in a casserole dish or baking pan.
Pour the curry mixture over the chicken.
Bake in the oven uncovered at 325º for 1 hour if the chicken is bone-in or 50 minutes if the chicken is boneless.

RAISIN RICE:
Cook the rice.
Brown ¼ cup of onions in the remaining butter.
Mix cooked rice with browned onions and butter.
Mix in raisins.
Serve chicken and sauce over raisin rice.
