8 c. hot water
1 Tbsp. Vegetable oil
1 lb. ground turkey, thawed if frozen
8 oz. fine egg noodles
1 packet (¾ oz) brown-gravy mix
cold water
2 c. frozen mixed veggies (broccoli, cauliflower & carrots)
1 t. mixed Italian herb seasoning
¾ t. minced garlic
½ t. salt
¼ t. pepper
¼ c. sour cream

Bring hot water to boil in a large saucepot. Heat oil in a large skillet over high heat. Crumble in turkey and, stirring often to break up pieces, cook 5 mins. until no longer pink. Meanwhile add noodles to boiling water and boil 4 minutes until tender. Drain; rinse with hot water to prevent sticking and spread on serving platter. Cover with foil to keep warm. Put gravy mix into a 2-cup glass measure. Gradually stir in cold water until mixture comes to the 1½ cup mark. Pour into skillet; add remaining ingredients except sour cream. Stir to blend. Bring to a boil; boil uncovered 3 to 4 minutes until vegetables are crisp-tender and sauce has thickened. Remove from heat; cool slightly, then stir in sour cream. Spoon over noodles.
