2 lbs. large fresh shrimp
8 Tbsp. (1 stick) butter
½ cup olive oil
1 Tbsp. lemon juice
¼ cup shallots or scallions, finely chopped
1 Tbsp. garlic, finely chopped
1 tsp. salt
pepper
4 Tbsp. fresh flat-leaf Italian parsley, finely chopped
lemon quarters

Shell the shrimp and clean them. Rinse the shrimp quickly under cold running water and pat them dry thoroughly with paper towels.
Preheat broiler to its highest temperature.
Melt the butter (be careful not to let it brown), and then stir in olive oil, lemon juice, shallots, garlic, salt, and pepper.
In a shallow baking dish (just large enough to hold shrimp in one layer), place the shrimp and pour the butter mixture over the shrimp. Turn the shrimp in the butter and oil until they glisten on all sides.
Broil the shrimp 3 to 4 inches from the heat for 5 minutes, then turn the shrimp over and broil them for 5 to 10 minutes longer, or until they are lightly browned and firm to the touch. Be careful not to overcook them.
With tongs, transfer the shrimp to a heated serving platter, pour the sauce from the pan over them, and sprinkle with chopped parsley.
Garnish with lemon quarters, and serve.
