1 c. Minute Rice, uncooked

1 medium onion, chopped

Vegetables: 1 pkg frozen vegetables, (chopped spinach, peas, green beans, broccoli, or mixed)

Meat: 1 c. diced chicken, hot dogs, turkey, or ham

1 can condensed cream soup: mushroom, celery, or chicken cream soup

Liquid: 1 c. milk or sour cream (sour cream works best with spinach)

Cheese: 1 c. of grated Swiss, American, Mozzarella, or Cheddar cheese

Flavor additions: to spinach, add 1 Tbsp. Lemon Juice; to Hot Dogs, add 1 Tbsp. Yellow Mustard;
to Turkey, add 2 Tbsp. chopped green or red bell pepper.

Directions:
Directions:
Place onion and vegetables in 1-1/2 quart baking dish. Bake at 350º for 7 minutes or microwave on high 2 minutes, to partially thaw.

Stir in rice, meat, soup, liquid, half the cheese, and the flavor addition, then sprinkle remaining cheese on top.

Bake for 45 minutes at 350º until hot and bubbly.
