1 lb. pork breakfast sausage
1 chopped onion
1 tsp caraway seeds
1 tsp ground fennel
3 tbsp plus 1 cup flour
2 cups sauerkraut drained and coarsely chopped
4 oz creme cheese
1 tbsp dijion mustard
salt and pepper (optional)
1 egg beaten plus 3. more eggs
1/4 c minced chives
3 c bread crumbs

Directions:
1. line baking sheet with parchment paper. Cook sausage, onion, caraway seeds, and fennel until not pink. Stir in flour until incorporated
2. remove from heat and stir in sauerkraut, cheese, mustard and 1 tsp pepper until cream melts. Cook ten minutes, then stir in beaten egg and chives. divide into 36 portions and roll into balls
3. Place 1 cup flour in shallow dish, beat remaining eggs in second dish and bread crumbs in third bowl. Season bread crumbs with one teaspoon salt and pepper.
4. roll balls in flour, dip in eggs and coat with crumbs pressing gently to adhere. Freeze until firm, about 30 minutes
5. Place balls in hot grease and fry till golden brown
