24 lasagna noodles
2 pounds ground beef
2 envelops taco seasoning
4 egg whites
2 - 15 oz cartons of ricotta cheese
8 cups (2 lbs) shredded cheddar cheese
2 - 24 oz jars of chunky salsa

Directions:
Preheat oven to 350º
Cook noodles according to package directions. keep in hot water until ready to assemble then drain.

In large skillet, cook beef over medium heat until no longer pink. Drain then stir in taco seasoning.

In a small bowl, combine egg whites & ricotta cheese.

In each of two 13x9 pans, layer 4 noodles, 3/4 cup ricotta mix, half the beef mix & 1+1/3 cup cheddar cheese. Top each with 4 more noodles, 3/4 cupp ricotta, 1+1/2 cup salsa & 1+1/3 cups cheese.Repeat.

Bake uncovered 35 to 40 minutes or until heated through. Let stand atleast 10 minutes before cutting

If freezing one of the pans, freeze before baking it & thaw out in refrigerator for 8 hours before baking
