For Brussel Sprouts:
2 pounds fresh or thawed frozen brussel sprouts, halved
4 TB olive oil
sea salt
freshly cracked pepper

For Sauce:
1 pound thick cut bacon, cooked & crumbled. reserve 4 TB bacon drippings
4 TB shallots, diced
3 TB Dijon mustard
drizzle of olive oil

For the topping:
1/4 cup blue cheese crumbles or feta or goat cheese
4 TB toasted almonds, pecans or walnuts

Directions:
Directions:
Preheat oven to 375º. Coat brussel sprouts in oil, salt & pepper. Roast until very golden brown & tender.
In frying pan, fry bacon until crisp. Remove from pan & crumble.Set bacon aside.

In this warm pan, with reserved bacon grease, add shalllots & cook until tender, absorbing bits from the pan. Whisk in mustard & remove from heat. Drizzle olive oil to form dressing.

In serving dish, toss brussel sprouts with dressing then crumble bacon & cheese on top. Serve warm.
