Crock Pot Sweet Potato Casserole Recipe

5 medium to large sweet potatoes
2 cups chicken broth
1/4 cup butter, cubed
2 eggs, lightly beaten
1 tsp vanilla
1 cup brown sugar

For the topping:
1/2 cup brown sugar
1/3 cup melted butter
1/3 cup flour
1 cup chopped pecans

Directions:
Directions:
Peel sweet potatoes & cut into even 1-2 " cubes. Place the potatoes into your crock pot & add the chicken broth & sprinkle the cubed butter on top.

Cover & cook on HIGH for 3 hours, or until the potatoes are soft enough to mash.

Use potato masher & mash potatoes to your desired consistency

Add the lightly beaten eggs, brown sugar & vanilla to the crock pot & stir to combine.

In a separate bowl, combine the topping ingredients & stir to coat. sprinkle over the mashed potatoes, replace the lid & continue to cook on high for 2 more hours.

Serve warm right out of the crock pot!!!
