6 TB butter, divided
1 TB olive oil
3 pounds medium yellow onions, peeled & thinly sliced
1 tsp sugar
salt to taste
1 TB flour
8 cups of eef stock
2 cups dry white wine
freshly ground pepper
4 hamburger buns or slices of baguette
8 slices provolone cheese

Directions:
Directions:
Over medium heat, melt butter & oil in a large, heavy stock pot.

Add sliced onions, cover & cook, stirring occassionally, untilonions are soft & translucent. Increase heat to high, remove lid & add sugar & salt. Saute, stirring often until onions are very soft & a deep golden brown.

Reduce heat to medium, sprinkle in flour & cook, stirring constantly for 2 to 3 minutes. Add about 2 cups of stock & stir to blend, then add rest of stock & wine. Season to taste with salt & pepper & simmer for another 30 minutes.

Preheat oven to 425º. Brush baguette slices or buns with remaining butter & place in oven to toast brown. When brown, remove from oven.

Gather 8 small oven proof bowls, spoon in soup. Add one bun half & top with a slice of cheese. Put bowls on cookie sheet & place into oven until cheese is toasted.
