1/2 cup softened butter
1/2 cup fat free plain yogurt or unsweetened applesauce
3/4 cup packed light brown sugar
3/4 cup sugar
1 large egg
1 tsp vanilla
2 cups flour
1 TB ground flax seed (optional)
1 cup old fashioned oats
1 tsp baking soda
1 tsp pumpkin pie spice
1/2 tsp salt
1 cup canned pure pumpkin
1 cup semi-sweet chocolate chips
1 cup diced fresh cranberries (optional)
1/2 cup chopped pecans (optional)

Preheat oven to 350º. Line cookie sheet with parchment paper


In a large bowl, combine butter, yogurt, & sugars until well blended; Stir in egg & vanilla

In separate bowl, combine all dry ingredients; combine well.

Stir flour mixture alternately with the pumpkin into creamed mixture. Fold in chips & cranberries & pecans.

Drop by TB onto cookie sheet. Bake for about 12 minutes or until lightly browned.
