2+1/4 cups flour
1 tsp baking soda
2 sticks of butter, softened
1 tsp salt
3/4 cup sugar
3/4 cup firmly packed brown sugar
1 tsp rum extract
2 large eggs
1 - 10 oz pkg butterscotch chips
7 oz shredded coconut, divided
1 pkg coconut cream pudding mix

Directions:

Toast coconut until light brown

Preheat oven to 350º. Spray 9X13" baking sheet with non stick spray

In large mixing bowl, mix sugars,soda,salt & pudding mix. Add eggs, one at a time, extract & butter & beat until smooth. Beat in 5 oz coconut. Gradually add flour until well blended. Stir in chips

Drop dough by rounded teaspoons onto cookie sheet

Slightly flatten top of each ball with the back of a teaspoon & drop a pinch of toasted coconut onto each cookie

Bake 12 - 14 minutes or until toothpick inserted into center of cookie pulls out clean

Let cool on a wire rack.
