2 + 1/2 pounds of sweet potato, peeled & cut into 3/4 inch cubes
1/3 cup Kahlua
2 TB melted butter
1 TB lemon juice
1/2 tsp salt
freshly ground pepper, to taste

Directions:
Directions:
Preheat oven to 400º

Arrange potatoes in an even layer in a 13X9" glass baking dish

Combine rest of ingredients in a small bowl.

Pour the mixture over the potatoes & toss.

Cover dish with foil & continue to bake, stirring every 15 minutes until potatoes are tender & starting to brown, 45 to 50 minutes more.
