4 cups corn kernels
1 jalapeņo, seeded and diced (optional)
3 tablespoons mayonnaise
2 tablespoons crumbled cotija cheese
2 tablespoons chopped fresh cilantro leaves
1/2 teaspoon chili powder
1 clove garlic, grated
Juice of 1 lime

1. Melt butter in medium pot over medium-high heat.
2. Add corn and cook until just tender, about 8 minutes.
3. Remove from heat and add remaining ingredients. Stir to combine. Serve warm.
