"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 pound ground beef
1 pound Italian sausage (sweet, but spicy can be used if you want spicy meatballs)
1 egg
4 tablespoons milk
Bread crumbs
3 cloves garlic - minced
Salt to taste
Olive or vegetable oil (enough for about 1-2 inches high in pan)

Directions:
Directions:
Add meats, egg, milk, garlic, and a few punches of salt in bowl.
Sprinkle a couple of tablespoons of breadcrumbs in the bowl. Blend together. Don’t over mix.
You may need to add a little more breadcrumbs but don’t use too much, you don’t want dry balls!
Take a couple of tablespoons of meat in the palm of your hand and roll into balls. Sizes can vary depending on what you like, just be sure all balls are consistent in size.

Heat oil in skillet, you want the oil to be deep enough to cover at least half the ball.

When oil is hot ( not too hot) add layer of balls, don’t put them too close together. Let cook until browned and turn over to cook other side. Remove from pan and let drain on paper towels.

You can also bake in oven for a healthier option. Line baking sheet with foil before placing balls. Cook at 350 until cooked through.

TIP: To ensure you have the right amount of seasoning, pinch small amount of meat mixture and cook in oil to taste before rolling all of the balls. You can add fresh or frozen minced basil to the mixture for added flavor.
I like to double the recipe and freeze half of the balls to use later. for meatball sandwiches.
