4 TB olive oil
1 yellow onion, chopped
1 red bell pepper, chopped
1 Anaheim chile pepper, chopped
2 red jalapeno peppers, chopped
4 garlic cloves, minced
2 1/2 pounds of lean ground beef
1/4 cup Worcestershire sauce
pinch of garlic powder(to taste)
2 beef bouillon cubes
1-12 oz can or bottle of light beer (Coors)
1 - 28oz can San Marzano tomatoes
1 - 14oz fire roasted diced tomatoes
1 - 12 oz tomato paste
1/2 cup white wine (can be red)
2 TB chile powder
2 TB ground cumin
1 TB brown sugar
1 TB chipotle pepper sauce
2 1/2 tsp dried basil
1 1/2 tsp smoked paprika
1 tsp salt
1/2 tsp dried oregano
1/2 tsp ground black pepper
2 - 16 oz cans of dark red kidney beans, or beans of your choice
1 cup sour cream
3 TB chopped fresh cilantro
1/2 tsp ground cumin

Directions:
In a large pot, heat oil & over medium heat cook onion, peppers & garlic until soft & tender
In another skillet, brown meat until crumbly (5-7 minutes)
Add Worcestershire sauce, garlic powder & crumbled bouillon cubes.
Add beer & stir well, scraping browned bits off bottom of pan & liquid is hot.
Cook about 3 minutes then add to veggie mixture in big pot.
Add all the rest of the ingredients up to the beans & continue to simmer for about 90 minutes either in this pot or put into a crock pot.
Add beans & cook about 30 minutes more

Can be served with pasta, rice or with sour cream mixed with cilantro & cumin
