Ingredients: 1 tsp. sugar ½ cup lukewarm water 1 pkg. active dry yeast 5-6 cups Robin Hood flour 1 cup milk 3 tbsps. sugar 2 tsps. salt 2 tbsps. shortening, butter or margarine ½ cup water, cold

Directions:Dissolve 1 tsp. sugar in cup lukewarm water in large, warm bowl. Sprinkle yeast into water mixture. Let stand 10 minutes then stir well. Spoon or pour flour into dry measuring cup. Level off and pour measured flour onto wax paper. Scald milk, stir in sugar, salt and shortening. Add cold water and cool to lukewarm. Add lukewarm milk mixture and 2 cups flour to dissolved yeast mixture. Beat with rotary beater till smooth. Add 3 cups remaining flour gradually. If necessary add enough flour to make a soft dough which leaves sides of bowl. Turn out onto floured board. Round up into a ball. Knead 5-10 minutes or until dough becomes smooth, elastic and no longer sticky. Place in a lightly greased bowl. Grease top of dough. Cover with waxed paper. Let rise in warm place (75ºF to 85ºF) until doubled (1-1½ hours. Punch down. Turn out onto board and divide dough into 2 equal portions. Round up each portion. Shape each portion into a loaf. Place in a well greased 8½" x 4½" x 2⅜" bread pans. Cover with greased waxed paper and let rise in warm place until dough rises 1"-1½" above top of pan in center and corners are filled (1-1½ hours). Bake 400ºF for 35-40 minutes. Remove from pans immediately. Brush top crust with butter or margarine, if desired. Cool on racks. |
