Ingredients: CREPE BATTER:
1½ c. all-purpose flour 2 c. milk 3 tbsp butter, melted 2 tbsp sugar 2 eggs ½ tsp vanilla ½ tsp baking powder ½ tsp salt Butter for the crepe pan
FILLING:
1 c. cottage cheese 1 c. softened cream cheese ¼ c. powdered sugar ¼ tsp vanilla

Directions:In a large bowl, use an electric mixer to blend together all the CREPE ingredients, except for the butter for the pan. Blend until just smooth. The batter will be very thin.
Combine the FILLING ingredients in a medium bowl and mix by hand.
Preheat a crepe pan over medium heat. When the pan is hot, add about ½ teaspoon of butter. When the butter has melted, pour ⅓ cup of batter into the pan.Swirl the batter so it entirely coats the bottom of the pan. Cook for 1½ to 2 minutes or until golden brown on one side.
Use a spatula to lift an edge of the crepe. Grab it with your finger, slip the spatula underneath, and quickly flip it over. Cook for another 1½ minutes or so and then slide it out of the pan. Stack the finished crepes on top of each other to keep them warm.
Heat the cheese filling in the microwave 1 to 2 minutes or until it is hot. Pour 2 to 3 tbsp of cheese in each crepe. Fold the sides in and turn the entire blintz over (to hide the seam) onto a serving plate.
Serve 2 to 3 blintzes on a plate with a dollop of sour cream and two dollops of strawberry preserves. YUM! |

Notes: Rhonda worked as a waitress at IHOP(International House Of Pancakes)when she was in high school. When we started dating in 1974, she introduced me to IHOP's cheese blintzes. I really liked them and our kids have enjoyed them at IHOP over the years. IHOP no longer makes these same blintzes. I found this recipe online several years ago. They taste just like the ones we were served at IHOP. This recipe is a little labor intensive, but worth the effort. These blintzes pair up great with an ice-cold glass of milk.
