2/3 cup shortening or oleo
1 cup flour
1 tsp soda
1 tsp salt
1 1//2 cups sugar
2 eggs
1 tsp vanilla

Directions:
Directions:
Cream together shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift together flour, soda, and salt and add in shortening mixture alternately with the buttermilk. Add vanilla and pour into a greased baking dish. Bake 20 minutes at 350 degrees. (Baking dish 9x13) When cake is done, remove from oven and while cake is hot, spread the top with the following mixture.

1 cup crushed pineapple
1/2 cup sugar

Mix pineapple and sugar until well blended.

ICING

1 1/2 cup sugar
1/2 cup water
2 eggs whites
1 Tbsp white karo syrup

Combine and cook first 3 ingredients until it will spin a thread (238 degrees) Add to beaten egg whites slowly, beating thoroughly. Sprinkle top with toasted coconut.
