2 tbsp grapeseed oil
1 yellow onion, diced (1 cup)
1 clove garlic, minced
1 red bell pepper, diced (1 cup)
1 jalapeño pepper, seeds removed, diced, optional
2 lbs lean ground turkey
½ tsp kosher salt
1 tsp ground cumin
2 tsp chili powder
1 tsp dried oregano
1 tsp black pepper
½ tsp cayenne pepper (optional)
4 Roma tomatoes, chopped (2-2½ cups)
4 cups low sodium chicken or vegetable broth
1 cup water
1 avocado, diced

Directions:
Directions:
1. Heat oil in a medium stockpot over medium-high heat.
2. Add onions and sauté for 2 minutes.
3. Add garlic, bell pepper, and jalapeño pepper and sauté for 3-4 minutes.
4. Add meat and cook until no longer pink. Season with salt, cumin, chili powder, oregano, black pepper, and cayenne pepper.
5. Add tomatoes, broth, and water and bring soup to a boil.
6. Reduce heat to low, cover pot, and simmer for 8-10 minutes.
7. Top with avocado and serve.
